  • Dijon Mustard

  • Steak Spice

  • Olive oil

Instructions

Crab the knife, make a cut of about 2 inches deep on every side, and put the garlic inside those cuts so you can get the flavor from the center. Then rub your bison roast with rosemary and thyme.

Pepper your bison roast on all sides and add and rub mustard on every side. Now pour your steak spice on it and ensure it is covered every inch. Add washed carrots, onion and celery to your cooking sheet and place your marinated bison roast on this mirepoix.

Now drizzle a little olive oil and Put it in your oven which should be preheated to 375 degrees. Let it cook for 30 to 40 minutes at 136 – 138 degrees.

Remove it from the oven and put your bison roast on a plate and cook your mirepoix a little more and add beef stock and water in it and let it boil on your stove for about 7 minutes. Now use a sifter and sift your juice and let it cool.
