Ingredients
1 glass Rice
1 Onion, chopped
2 Chicken stock cubes
3 Garlic cloves, chopped
2 Red Bell Paper, sliced in stripes
2 Carrots, sliced in 4 pieces
1 Inch Garlic, chopped
2 Green chillies
Paprika
Oregano
White pepper
Oil
Recipe
- Wash the rice by adding hot water in it so it swells and absorbs all the starch.
- Pour the oil, crushed green chillies, oregano, paprika,white pepper, ginger and garlic into the saucepan. Give it a little stir and let it simmer gently over a low to medium heat.
- When it becomes translucent, add the carrots and red bell peppers and cover the saucepan with a lid.
- Let it cook for about 5-6 minutes and then add rice. Add chicken stock cubes and give it a good mix.
- Now add hot water and make sure it’s above the rice level.
- Cover with the lid and let it cook for at least 15 minutes on low to medium heat.
- Check the rice every few minutes to avoid over cooking.
Side Dishes with Chilean Rice
- You can eat it with a fried egg. It will enhance the taste and give your stomach warmth.
- Chicken roast is also a yummiest option to eat along with this dish.
